Faithful friends, you may recall my recent lamentation over the lack of über-fresh mozzarella in my life.
Mom sent me this little Limoges talisman last week.
Well sometimes friends, it really does take a village to get what you need! Little did I know my Momming comrade-in-arms, Julie, is also a serious foodie and was ready to take on my mozzarella challenge.
First, gather your ingredients, it's a pretty simple list -- milk, citric acid, dissolved rennet and salt.
A little acid and just the right amount of heat and you're Miss Muffet!
Separate the curds & whey, microwave the curds for a minute or so, add some salt, a bit more separating, a few kneads, and make yourself a cheese ball!
A quickie ice bath, then you're read to eat!
Mangia, mangia!

Fabulously fresh mozzarella, accompanied by heirloom tomatoes, fresh picked basil and super-premium EVOO.
Righteous ricotta with herbs (a little somethin' Julie whipped up while I turned my back! Who knew that "lasagna cheese" could be so de-lish!) spread on grilled sourdough.
Arugula with parm shavings, dressed with EVOO & fresh lemon juice.
And to quench the thirst -- a glass (or two) of a wonderful prosecco!
I think Martha & Ina would have been proud!

Only problem -- after such a fabulous midday repast, I am devoid of culinary motivation & inspiration when it comes to putting something resembling dinner on the table for my family!
Oh well, I'm willing to make the sacrifice!
